Cooking For One: A Recipe for Caregivers

Caring for an aging parent or loved one? One way to show love is through nourishing, easy-to-enjoy meals. Cooking for one doesn’t have to mean boring or bland—and stocking the freezer with ready-to-reheat meals can bring peace of mind for everyone.

Here’s a simple Chicken & Veggie Rice Bowl that’s perfect to portion out and freeze:

Chicken & Veggie Rice Bowl (Freezer-Friendly)

Ingredients (makes 4 individual servings):

2 boneless, skinless chicken breasts, cooked and chopped

2 cups mixed vegetables (steamed broccoli, carrots, peas, or your favorite blend)

2 cups cooked brown or white rice

1/2 cup shredded cheddar or mozzarella (optional)

1 tbsp olive oil or butter

Salt, pepper, garlic powder to taste

Instructions:

In a large bowl, mix the rice, cooked chicken, and veggies together.

Add olive oil or a pat of butter and season to taste.

Optional: Top with a sprinkle of cheese.

Divide into 4 small freezer-safe containers. Let cool completely before sealing and freezing.

To reheat: Microwave from frozen for 4–5 minutes, stirring halfway through.

Care Tip: These bowls are perfect for seniors who want something warm, healthy, and simple. Add a note or label with reheating instructions to make it even easier!
